MPC is composed of micellar casein, whey protein, with bioactivity and amino acid profile similar to the original milk. According to ADPI, MPC should contain 5%–6% moisture, 1.25%–2.5% fat, 40%–85% protein, 8%–10% ash and 8%–52% lactose (w/w).
